Research Publications (Food Safety)

This page tracks research articles published in national and international peer-reviewed journals. Recent articles are available ahead of print and searchable by Journal, Article Title, and Category. Research publications are tracked across six categories: Bacterial Pathogens, Chemical Contaminants, Natural Toxins, Parasites, Produce Safety, and Viruses. Articles produced by USDA Grant Funding Agencies (requires login) and FDA Grant Funding Agencies (requires login) are also tracked in Scopus.

  3. Gene expression of Aspergillus flavus strains on a cheese model system to control aflatoxin production

    • Journal of Dairy Science
    • The expression of genes associated with aflatoxin biosynthesis by different Aspergillus flavus strains growing on a cheese model system has not been studied. To control aflatoxin biosynthesis, it would be useful to understand the changes in gene expression during cheesemaking and relate those changes to toxin production.

  9. Inhibitory Effect of Volatiles Emitted From Alcaligenes faecalis N1-4 on Aspergillus flavus and Aflatoxins in Storage

    • Frontiers in Microbiology
    • Controlling aflatoxigenic Aspergillus flavus (Af) and aflatoxins in grains and food during storage are great challenge to humans worldwide. Alcaligenes faecalis N1-4 isolated from tea rhizosphere soil can produce abundant antifungal volatiles, and greatly inhibited the growth of Af in un-contacted face-to-face dual culture tests.

  10. Aflatoxin B1-Adsorbing Capability of Pleurotus eryngii Mycelium: Efficiency and Modeling of the Process

    • Frontiers in Microbiology
    • Aflatoxin B1 (AfB1) is a carcinogenic mycotoxin that contaminates food and feed worldwide. We determined the AfB1-adsorption capability of non-viable Pleurotus eryngii mycelium, an edible fungus, as a potential means for removal of AfB1 from contaminated solutions. Lyophilized mycelium was produced and made enzymatically inert by sterilization at high temperatures .
