Research Publications (Food Safety)

This page tracks research articles published in national and international peer-reviewed journals. Recent articles are available ahead of print and searchable by Journal, Article Title, and Category. Research publications are tracked across six categories: Bacterial Pathogens, Chemical Contaminants, Natural Toxins, Parasites, Produce Safety, and Viruses. Articles produced by USDA Grant Funding Agencies (requires login) and FDA Grant Funding Agencies (requires login) are also tracked in Scopus.

  1. Isolation of lactic acid bacteria from pao cai, a Chinese traditional fermented vegetable, with inhibitory activity against Salmonella associated with fresh cut apple, using modeling study

    • Journal of Applied Microbiology
    • Aims
This study was to isolate lactic acid bacteria (LAB) from pao cai, a Chinese traditional fermented vegetable, with outstanding inhibitory activity against Salmonella inoculated on fresh cut apple, using modeling method.

  2. Identification of a second two-component signal transduction system that controls fosfomycin tolerance and glycerol-3-phosphate uptake

    • Journal of Bacteriology
    • Fosfomycin resurfaced in particular interest because it is a great beneficial antibiotic for refractory infectious diseases caused by pathogens that are resistant to other commonly used antibiotics. Cells that are resistant to fosfomycin by chromosomal mutation have a high biological cost. We previously found that a bacterial two-component system, CpxAR induces fosfomycin tolerance of enterohaemorrhagic E. coli (EHEC) O157:H7.

  3. Clinical Isolates of Salmonella enterica Serovar Agona Producing NDM-1 Metallo-{beta}-Lactamase: First Report from Pakistan [Case Reports]

    • Journal of Clinical Microbiology
    • We report two cases of infantile diarrhea due to multidrug-resistant, NDM-1 metallo-β-lactamase-producing Salmonella enterica serovar Agona from Pakistan. This study alerts toward possible risk of NDM-1 transmission to enteric fever pathogens and encourages microbiologists to consider active screening of carbapenem resistance in nontyphoidal Salmonella isolates.

  4. Genomic Signature of Multidrug-Resistant Salmonella enterica Serovar Typhi Isolates Related to a Massive Outbreak in Zambia between 2010 and 2012 [Bacteriology]

    • Journal of Clinical Microbiology
    • Retrospectively, we investigated the epidemiology of a massive Salmonella enterica serovar Typhi outbreak in Zambia during 2010 to 2012. Ninety-four isolates were susceptibility tested by MIC determinations. Whole-genome sequence typing (WGST) of 33 isolates and bioinformatic analysis identified the multilocus sequence type (MLST), haplotype, plasmid replicon, antimicrobial resistance genes, and genetic relatedness by single nucleotide polymorphism (SNP) analysis and genomic deletions.

    • Journal of Clinical Microbiology
    • A retrospective investigation was performed to evaluate whole-genome sequencing as a benchmark for comparing molecular subtyping methods for Salmonella enterica serotype Enteritidis and survey the population structure of commonly encountered S. enterica serotype Enteritidis outbreak isolates in the United States. A total of 52 S.

  7. Evolution of host adaptation [Microbiology]

    • Proceedings of the National Academy of Sciences
    • Many bacterial pathogens are specialized, infecting one or few hosts, and this is often associated with more acute disease presentation. Specific genomes show markers of this specialization, which often reflect a balance between gene acquisition and functional gene loss. Within Salmonella enterica subspecies enterica, a single lineage exists that includes...

  8. Reconstructing pathogen evolution from the ruins [Microbiology]

    • Proceedings of the National Academy of Sciences
    • Advances in high-throughput sequencing have made genomic comparison an increasingly powerful tool for understanding pathogen evolution. From these analyses, elevated genome degradation has surfaced as a common trait among pathogens with a specialized lifestyle. Prime examples of this trend can be found within the species Salmonella enterica, wherein genomes of...

  9. Shiga Toxin 2-Induced Endoplasmic Reticulum Stress Is Minimized by Activated Protein C but Does Not Correlatewith Lethal Kidney Injury

    • Toxins
    • Enterohemorrhagic Escherichia coli produce ribotoxic Shiga toxins (Stx), which are responsible for kidney injury and development of hemolytic uremic syndrome. The endoplasmic reticulum (ER) stress response is hypothesized to induce apoptosis contributing to organ injury; however, this process has been described only in vitro.
