    • Aflatoxin B1 (AFB1), a potent food-borne hepatocarcinogen, is the most toxic aflatoxin that induces liver injury in humans and animals. Species-specific sensitivities of aflatoxins cannot be fully explained by differences in the metabolism of AFB1 between animal species. The gut microbiota are critical in inflammatory liver injury, but it remains to reveal the role of gut microbiota in AFB1-induced liver injury. Here, mice were gavaged with AFB1 for 28 days.

  2. Sodium Butyrate Ameliorates Deoxynivalenol-Induced Oxidative Stress and Inflammation in the Porcine Liver via NR4A2-Mediated Histone Acetylation

    • Mycotoxin-induced liver injury is often accompanied by oxidative stress (OS) and inflammation. This research aimed to explore the potential mechanism of sodium butyrate (NaBu) in modulating hepatic anti-oxidation and anti-inflammation pathways in deoxynivalenol (DON)-exposed piglets. The results show that DON induced liver injury, increased mononuclear cell infiltration, and decreased serum total protein and albumin concentrations.

    • The regulated mycotoxin 4-deoxynivalenol (DON) has a heterocyclic structure that is readily amenable to tautomerization and conformational isomerization in solution. An analysis of DON in solution by NMR revealed the presence of hemiacetal tautomer(s) and putative conformational isomers, which maintain the intact enone functional group. The extent and type of tautomerization/isomerization vary according to the NMR solvent used and produce different signal patterns in the NMR spectra.

    • The peanut plant accumulates defensive stilbenoid phytoalexins in response to the presence of soil fungi, which in turn produce phytoalexin-detoxifying enzymes for successfully invading the plant host. Mold development and mycotoxin contamination can occur in any crop or cereal that has not been stored properly for long periods of time and is subjected to high levels of humidity and temperature.

  11. Determination and Comprehensive Risk Assessment of Dietary Exposure to Ochratoxin A on Fermented Teas

    • A specialized method for ochratoxin A (OTA) determination on fermented teas was developed and validated using ultraperformance liquid chromatography tandem mass spectrometry (UPLC-MS/MS). Methodology results showed that recovery, relative standard deviation, accuracy, and precision were qualified. The limits of detection and quantification were 0.32 and 0.96 μg/kg, respectively. Two of 158 collected samples were screened for OTA contamination.

Common bean, soybean, and maize samples were stored for 6 months. CA treatments were conducted varying O2 and CO2 partial pressures, temperatures, and moisture contents of the chambers.

The method was validated according to the performance criteria defined by the European Commission (EC) in Commission Decision no. 657/2002.
