Research Publications (Food Safety)

This page tracks research articles published in national and international peer-reviewed journals. Recent articles are available ahead of print and searchable by Journal, Article Title, and Category. Research publications are tracked across six categories: Bacterial Pathogens, Chemical Contaminants, Natural Toxins, Parasites, Produce Safety, and Viruses. Articles produced by USDA Grant Funding Agencies (requires login) and FDA Grant Funding Agencies (requires login) are also tracked in Scopus.

  1. Multi-residue detection of antibiotics in migratory goat milk and human health risk assessment in Western Himalayan region, India

    • Journal of Food Composition and Analysis
    • Occurrence of antibiotics in animal sourced foods not only affects economy but also poses potential health risks. The present study aimed to validate simultaneous detection of amoxicillin, penicillin – G and enrofloxacin in raw migratory goat milk (N=223) by HPLC-DAD and assess human health risks in Western Himalayan region, India.

  2. Antibiotic residues in chicken meat in China: Occurrence and cumulative health risk assessment

    • Journal of Food Composition and Analysis
    • A national survey of sixteen commonly used antibiotics in chicken meat was conducted for three consecutive years (2016–2018). A total of 4591 chicken meat samples were collected from 24 provinces in China and measured by ultra-high performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS). The results revealed that all of the antibiotics studied were detected with an overall detection frequency of 20.47% and an exceeding standard rate of 2.94%.

  3. Comprehensive survey and health risk assessment of antibiotic residues in freshwater fish in southeast China

    • Journal of Food Composition and Analysis
    • To assess the health risks from antibiotic residues in freshwater fish, this study analyzed residues of 65 antibiotics in 10 freshwater fish species sampled in southeast China. Eight antibiotics were detected by UPLC-MS/MS at an overall detection rate of 53.9%, with 3.48% of samples exceeding MRLs and 13.0% suggesting the misuse of human antibiotics. Quinolones, particularly enrofloxacin, were the most frequently detected residues.

  4. In vitro oxidation promoted by sarafloxacin antibiotic residues on myosin and chicken meat proteins

    • Journal of Food Composition and Analysis
    • Fluoroquinolones are widely employed to treat or prevent respiratory diseases in poultry, and their residues could be present even after slaughtering. Thus, this study aimed to assess the oxidative effect of fluoroquinolones on myosin and chicken meat proteins under in vitro conditions, using proteomics and peptidomics approaches.

  5. Development of a vortex oscillating clean-up column for high-throughput semi-automatic sample preparation of drug residues in fish muscle tissues

    • Journal of Food Composition and Analysis
    • A novelty high-throughput semi-automatic sample clean-up method was developed and used for rapid analysis of 9 drug residues in fish muscle tissues combined with high-performance liquid chromatography/quadrupole-linear ion trap mass spectrometry (HPLC-QTRAP-MS/MS). The target compounds were extracted by Quick, Easy, Cheap, Effective, Rugged and Safe multiresidue (QuEChERS) method with acetonitrile. A vortex oscillating clean-up column was proposed for single step purification firstly.
