  1. Effect of high-oxygen and oxygen-free modified atmosphere packaging on the spoilage process of poultry breast fillets

    • A comparison was made of the effect of atmospheres containing high oxygen (70% O2 and 30% CO2) or high nitrogen (70% N2 and 30% CO2) on the spoilage process during storage (at 4°C) of poultry fillets. Four samples of each gas atmosphere were analyzed at 7 sample points during storage.

  2. Administration of a Salmonella Enteritidis {Delta}hilAssrAfliG strain by coarse spray to newly hatched broilers reduces colonization and shedding of a Salmonella Enteritidis challenge strain

    • Consumption of contaminated poultry meat is still an important cause of Salmonella infections in humans. Colonization inhibition (CI) occurs when a live Salmonella strain is administered to chickens and subsequently protects against challenge with another Salmonella strain belonging to the same serotype.

  3. Selection for pro-inflammatory mediators produces chickens more resistant to Eimeria tenella

    • We recently developed a novel selection method based on identification and selection of chickens with an inherently high and low phenotype of pro-inflammatory mediators, including interleukin (IL)-6, CXCLi2, and CCLi2. The resultant high line of chickens is more resistant to Salmonella enterica serovar Enteritidis (Salmonella Enteritidis) compared to the low line.

  4. Development of an absorbance-based response model for monitoring the growth rates of Arcobacter butzleri as a function of temperature, pH, and NaCl concentration

    • In this study, the growth of Arcobacter butzleri in poultry was evaluated as a function of storage temperature (5, 22.5, and 40°C), pH (5, 7, and 9), and NaCl concentration (0, 4, and 8%). A predictive model was developed using the absorbance-based response surface methodology to describe the growth rate.
