Research Publications (Food Safety)

This page tracks research articles published in national and international peer-reviewed journals. Recent articles are available ahead of print and searchable by Journal, Article Title, and Category. Research publications are tracked across six categories: Bacterial Pathogens, Chemical Contaminants, Natural Toxins, Parasites, Produce Safety, and Viruses. Articles produced by USDA Grant Funding Agencies (requires login) and FDA Grant Funding Agencies (requires login) are also tracked in Scopus.

  1. Analysis of Bacillus cereus toxicity using PCR, ELISA and a lateral flow deviceAuthors

    • Journal of Applied Microbiology
    • The aim of this study was to evaluate the performance of immunodetection methods and PCR analysis of enterotoxigenic Bacillus cereus strains. Methods and Results Eighty-eight enterotoxigenic B. cereus group strains linked to foodborne outbreaks and illnesses were studied with 30 exclusivity non-enterotoxigenic strains including B. amyoliquifaciens, B. subtilis, S. aureus, Salmonella, and E. coli for this assessment.

  2. Covalent Immobilization of Recombinant Organophosphorus Hydrolase on Spores of Bacillus subtilis

    • Journal of Applied Microbiology
    • Aims
Organophosphorus pesticides are widely used in agriculture. Accordingly decontamination of these pesticides and their residual in environment is an important aim of researchers. One of the best approaches is enzymatic detoxification of these compounds with organophosphorus hydrolase (OPH). The immobilization of OPH on environmentally friendly supports is of great importance for developing stabilized enzymes to degradation of organophosphorus compounds.

  3. Genotypic diversity and pathogenic potential of Yersinia enterocolitica biotype 2 strains isolated in Brazil

    • Journal of Applied Microbiology
    • Aims
To investigate the pathogenic potential and genotypic diversity of Yersinia enterocolitica biotype 2 strains isolated in Brazil and to compare these strains with other Y. enterocolitica biotypes using ERIC-PCR and PFGE.

  4. Invading slugs (Arion vulgaris) can be vectors for Listeria monocytogenes

    • Journal of Applied Microbiology
    • Aims
Listeriosis is a frequent silage-associated disease in ruminants. The slugs Arion vulgaris are invaders in gardens, vegetable crops and meadows for silage production. Field and laboratory studies were conducted to clarify whether slugs could host Listeria monocytogenes and thereby constitute a threat to animal feed safety.

  5. In vitro aflatoxin B1 binding capacity by two Enterococcus faecium strains isolated from healthy dog faeces

    • Journal of Applied Microbiology
    • Aim
This study evaluated the binding capacity of aflatoxin B1 (AFB1) by two Enterococcus faecium strains (MF4 and GJ40) isolated from faeces from healthy dogs.

      Materials and Methods
The binding assay was performed using 50 and 100 ppb of AFB1 analysing the effects of the viability, incubation time and pH on AFB1 binding. Binding stability was determined by washing three times the bacteria-AFB1 complexes with phosphate buffer saline.

  6. Microbial growth parameters obtained from the analysis of time to detection data using a novel rearrangement of the Baranyi–Roberts model

    • Journal of Applied Microbiology
    • Aims
To explore the predictions of a novel rearrangement of the Baranyi–Roberts model (BRM) with time to detection data obtained from optical density data of microbial growth.

  7. Isolation of lactic acid bacteria from pao cai, a Chinese traditional fermented vegetable, with inhibitory activity against Salmonella associated with fresh cut apple, using modeling study

    • Journal of Applied Microbiology
    • Aims
This study was to isolate lactic acid bacteria (LAB) from pao cai, a Chinese traditional fermented vegetable, with outstanding inhibitory activity against Salmonella inoculated on fresh cut apple, using modeling method.

  8. Antimicrobial activity of hop extracts against foodborne pathogens for meat applications

    • Journal of Applied Microbiology
    • Aims
The objective of this study was the fundamental investigation of the antimicrobial efficiency of various hop extracts against selected foodborne pathogens in vitro, as well as their activity against Listeria monocytogenes in a model meat marinade and on marinated pork tenderloins.
