Anti-Listerial Potential of Frankfurter Casings

Objective

This research study, known as 'Antilisterial potential of frankfurter casings', is designed to assess the efficacy of a biopreservative applied to frankfurters via casings for control of Listeria monocytogenes.
<p>
Obtain frankfurters from a commercial producer that are prepared in casings containing a biopreservative, monitor the viability of Listeria monocytogenes, within vacuum-sealed packages of said frankfurters during a refrigerated storage.
