The overall goal of this project is to reduce cross-contamination of pathogenic microorganisms in food processing plants through the development and application of a novel antimicrobial and non-fouling polymer coating, using drains as a model system. To accomplish this goal, we propose a multidisciplinary approach encompassing expertise in food microbiology, antimicrobial and nonfouling materials, food science, and polymer synthesis. The following are our three specific research objectives.Synthesize & characterize antimicrobial & nonfouling polymeric coating to control pathogen adhesion & persistence in drains. Characterize durability, antimicrobial, and non-fouling character of the polymer coatings. Demonstrate efficacy of the new coatings in preventing formation and persistence of Salmonella and L. monocytogenes biofilms in Zone 3 drains under both laboratory and in situ process conditions.
