The long-term goal of this proposal is to develop safe and effective strategies for controlling L. monocytogenes biofilms using ultra-fine bubbles thereby reducing its persistence in the processing environment and improving food safety. The specific objectives of this proposal are:1) To reduce L. monocytogenes biofilm on common food contact surfaces by using ultra-fine ozone bubble wash treatments.2) To investigate the potential mechanism(s) of action of ultra-fine ozone bubbles against L. monocytogenes biofilm by using transcriptomic and proteomic approaches.
