Bacterial Pathogen Surrogate Evaluation

Objective

This project aims to evaluate, in a systematic and comprehensive manner, a number of different bacterial species for use as surrogates for a diverse range of bacterial pathogens, under certain food processing parameters. A standard set of surrogate organisms will be developed for use in process development and validation.
