The ultimate goal of this Hatch Project is to promote healthy eating behavior by increasing acceptance of healthy foods (e.g. products formulated to deliver reductions in sugar, fat, calories, and/or salt) and by improving consumer perception of these foods. The specific objectives are 1) to develop healthy food alternatives with a better sensory profile; 2) to investigate food-extrinsic factors such as packaging or labels that influence consumer acceptance of healthy foods; 3) to measure consumers' knowledge, perception and attitudes towards healthier food options; 4) to create a profile of consumer segments for healthy food alternatives; and 5) to explore effective scientific communication and educational interventions to promote healthy eating.
