"(1) Collect data on microbial contamination patterns (coliforms, Enterobacteriaceae, total Gram-negative bacteria, sporeformers and total bacteria) and associated favor defects in milk from 5 fluid milk processing plants
(2) Collect data on specific spoilage patterns associated with post-processing contamination (e.g., re-occurrence of genetically identical spoilage organisms, suggesting niches) in different plants; these data will facilitate selection of plants for Aim 2
(3) Collect data on the effects of improved sanitation procedures and protocols on fluid milk PPC in 2 or 3 plants
(4) Develop protocols for improve sanitation procedures that are effective in reducing fluid milk PPC"
