The goal is to expand our current strength in the graduate training program in Food for Health while incorporating novel approaches to training students in the TESA of Food Science, Human Nutrition and Human Sciences with a focus on Food Science and the Gut Health.The objectives are to determine the impact of food bioactive and the whole food on the gut physiology/function; characterize the structural and functional relationship between food bioactive and gut microbiome; and increase the understanding of food bioactive-regulated gut immunity/pathology.
