Develoment, Implement and Evaluation of Online Food Safety Course for Small Scale Ice Cream Makers

Objective

Obj 1. Design, develop, implement and evaluate an online food safety course (total of six lessons) for artisan cheese-makers. Abstract: The objectives of this project are to design, develop, implement and evaluate an online food safety course for artisan cheese-makers. We will repurpose the previously implemented online course on food safety for artisan cheesemakers and customize the content so it is relevant for small scale ice cream makers. The overarching goal is to protect the dairy industry as a whole by preventing foodborne illness and food recall events associated with food products manufactured by small scale ice cream makers. A new online food safety course for small scale ice cream makers (the first of its kind) will be developed and made available to a nationwide audience. An understanding of best practices for improving the target audience's food safety competencies and behaviors will also be published. The research on impacting these metrics through distance education programs is scarce, so this program evaluation project will fulfill a much-needed gap in the literature.
