Objective

Identify and quantify levels of bioactive phytonutrients in economically important crops specific to the Mid-South region and determine the effect of maturation on phytonutrient content. Identify optimal postharvest handling and storage parameters that retain or elevate levels of phytonutrients and antioxidant capacity in targeted crops. Develop laboratory and pilot scale methods for extracting, concentrating, and stabilizing bioactive phytonutrients in the targeted.
