Consumers often lack the knowledge to identify good food safety information and to make informed decisions about food selection and handling. One objective of this project will be to develop visual aid materials for use by extension agents in working with clientele to increase their adoption of recommended good handling practices. Because aquaculture is an important industry in Arkansas and fish can be an important part of a health diet, but is also highly perishable, the project's second objective is to develop materials for use by extension agents and retailers on the safe production, marketing, and handling of seafood products.
