1) Investigate the spectral properties of apples in the near-infrared region as a means for assessing firmness & sugar content, 2) Develop calibration models & computer algorithms to predict fruit firmness and sugar content, 3) Develop a prototype sensing system for rapid assessment of fruit firmness and sugar content, 4) Develop a hyperspectral imaging system for automated detection of bruises on apples as well as other surface defects.
