Development of Predictive Models for the Microbiological Safety and Shelf Life of Fish Products

The objective is to develop mathematical models that can be used to predict the microbiological safety and shelf life of raw fish products during processing and distribution. The models will assist producers of raw fish products in designing the unit operations involving in producing raw fish products, such as processing, handling and storage, to enhance the products¿ microbiological safety and quality.
