The objective of this cooperative research project is to develop and validate Raman imaging technologies for detection of hazardous food materials and to develop a rapid commercial prototype Raman imaging system suitable for in situ detection of hazardous food materials in commercial food processing environments. The common goal is to design and fabricate a commercial prototype hyperspectral Raman imaging system for detecting hazardous food materials in a commercial setting and to develop rapid image analysis methods for using hyperspectral Raman imaging technologies.
