In the UK and overseas, there is an increasing occurrence of foodborne illnesses associated with enterohaemorrhagic Escherichia coli (EHEC). Infections with EHEC cause a wide spectrum of disease in humans ranging from mild diarrhoea to haemorrhagic colitis
