Food-borne illnesses in food service establishments are a concern. Indiana has responded by requiring food managers to pass a "certified" food sanitation exam. This exam will be required for 16,000 food managers. In order for food managers to have the knowledge needed to decrease food-borne illness and pass the exam, training is needed. The University of Cooperative Extension Services at Purdue University can offer an ideal opportunity to provide food safety training. The project team will deliver education using a "train-the-trainer" approach. Faculty members from Purdue University will train County Extension Educators and County Sanitarians who will train food managers. This approach is capable of training many food managers in a short time.
