Food Safety Programming for Vulnerable Populations

Objective

The very young, the very old, and persons with liver disease or other immune-compromising conditions are most at risk for serious consequences of food-borne illness. Louisiana has over 10,000 daycare, preschool and Head Start centers, and over 500 nursing homes and congregate meal sites. LA CES will develop and implement a train-the-trainer program targeting food handlers at these centers. Videos/materials from previous FSQ projects will be incorporated and distance learning technology will be used where possible.

Also, LCES will develop three PSA's to make seafood consumers aware of actual risks and recommend food handling practices.
