This two-year, multi-state project will focus on the development of a train- the-trainer program for the fresh juice industry in anticipation of the fresh juice HACCP regulations. The project would follow the example of the seafood and meat and poultry industries by organizing a Fresh Juice HACCP Alliance.
The Alliance would design, develop, and make available train-the-trainer courses and a model HACCP training curriculum for fresh juice processors. Long-term sustainability will be built in by setting up a permanent site for the Alliance.
