The majority of meat and poultry processors in Arizona are classified as small or very small plants. The objectives of this project are to provide the training and technical assistance for the development and implementation of HACCP at these facilities.
It is anticipated that the need for this program will extend beyond the "official" HACCP implementation deadlines,as a significant number of companies are struggling with HACCP compliance issues. As part of this project, a HACCP information resource center will be established through the University of Arizona Cooperative Extension Service. This project will be multi-disciplinary as well as inter-organizational.
