Objective

(1) Determine the efficacy of ionizing irradiation and processing variables on the inactivation of foodborne pathogens. (2) Determine the efficacy of ionizing irradiation of processed meat and poultry products to inactivate foodborne pathogens. (3) Identify possible interactions between ionizing irradiation, other processing technologies. (4) Maximize desired quality attributes of irradiated foods.
