A self-sustaining Internet based distance education system for HACCP and food safety training will be developed using the existing Seafood HACCP Alliance Training Curriculum as a pilot model. This alternative training format is needed to reach more workers in seafood and other food processing establishments with HACCP and food safety training. This is a multi-institutional project involving Extension Specialists from Cornell University and the Universities of Maryland and Florida working with an established Alliance Alternative Training Committee. A national train-the- trainer program will be conducted. Program evaluation will occur during development and by students who complete the course.
