Objective
1) Identify indigenous lactic acid bacteria (LAB) populations in raw buffalo milk. 2) Isolate LAB strains from buffalo milk and screen for potential bioactive compounds. 3) Isolate and identify bioactive compounds and assess their nutritional or biological effects in comparison to bovine milk.
