Microbial Factors/Pathogenesis of Subacute Rumen Acidosis (SARA) in Cattle to Assure Food Safety

Objective

<OL> <LI> Identify microbial processes that are critical to the onset of SARA, and develop an understanding of GI tract microbial ecology, particularly the effect of SARA on pathogen proliferation. Apply this knowledge to the proliferation of microbes causing food safety and health problems. <LI> Develop intervention technologies which will prevent or reduce the effects of SARA in cattle, and will thus help assure the safety of food products from cattle.

Investigate and describe the microbial starch fermentation processes in the rumen. Identify microbes critical to the onset of subacute rumen acidosis. Develop intervention strategies to prevent acidosis.
