Modeling the Effect of Chlorine Stress and Storage Condition on the Growth and Survival of E. Coli O157:h7 in Pre-Packaged Leafy Greens

Objective

1) Develop a mathematical model to describe the growth and survival of chlorine-stressed E. coli O157:H7 in packaged pre-cut vegetables; and 2) the Cooperator to acquire knowledge and methodologies for developing predictive models through experimental design, data collection and analysis, and model and software development.

Approach:
A laboratory study that examines the growth and survival of E. coli O157:H7 in packaged pre-cut leafy green will be conducted. A full factorial design will be used to investigate chlorine stress and storage temperature on the survival of E. coli O157:H7 in leafy greens. Data will be analyzed and fitted with suitable models to describe the lag, growth rate, and maximum population of E. coli O157:H7 in leafy greens.
