Objective
Measure growth and/or death rates of S. aureus, E. Coli, and Listeria monocytogenes in individual components of rations as functions of water activity, pH, temperature, and lactate concentrations. Develop and apply a predictive model to determine guidelines for HACCP for preventing growth.
