The objective is to develop commercially viable edible films and coatings with exceptional moisture barrier properties.

APPROACH: Using the tools of nanoscience, several platform technologies will be explored, such as: 1. self-assembled layer-by-layer coatings and films 2. incorporation of hydrophoblic nanoparticles into films and coatings 3. self-assembled microemulsion films and coatings; and 4. mechanically-formed emulsion films and coatings.
