A National Center for Home Food Preservation will be established to: <OL> <LI> Update canning and freezing guidelines and the database supporting such guidelines; <LI> Identify future research needs; update the USDA Complete Guide to Home Canning; <LI> Finalize a USDA Complete Guide to Home Freezing. </OL> This Center will operate with a national advisory committee helping to set priorities and review publications.
The Cooperative Extension System and USDA have long been recognized as credible sources for science-based home food preservation recommendations. The last developmental work on these recommendations was completed almost a decade ago.
