Current risk analysis procedures for food-borne diseases are inadequate. The long-term goal of our multi-disciplinary research is to refine existing and develop new methodologies to allow for risk analysis procedures for food-borne diseases that are more efficient but still scientifically-based. We will apply the methods to toxoplasmosis in swine, Escherichia coli 0157:H7 in feedlot cattle, and Salmonella enteritidis in shell eggs, but the methods will be broadly applicable to other food-borne diseases.
