Objective

​(1) Test diverse Listeria strains for growth and biofilm formation, stability testing and basic flavor analysis
(2) Identify and purify bioactive compounds
(3) Test oxidative stress and membrane damage; and conduct gene expression analysis (RNASeq)​
(4) Investigate mechanisms of action
