Objective

The goal of this project is to develop a universal, cost-effective, and efficient encapsulation technology for delivering functional probiotics that can be incorporated into food products.The objectives are:Develop novel oleogel and emulsion delivery systems for probiotic strains.Examine the efficacy of the oleogel and emulsion systems as related to the stability of probiotic strains.Investigate the stability of the probiotic strains introduced into foods via the delivery system.
