Publications: Modification of current publications and development of new publications specific to the matter of can seam evaluation. Process times: Determination of smoked salmon process time in two sizes of salmon cans.

No current research is available for salmon processed at home in metal cans. Improper use of can sealers is common. This project will establish valid process times and training for the proper use of can sealers, for the ultimate goal of reducing the risk of contracting botulism from home preserved Alaska salmon.
