1. Use a slug-flow device to determine survivability of M. paratuberculosis in UHT milk at 8 time/temperature combinations. 2. Determine D and Z values for M. paratuberculosis in milk using the slow-flow device. 3. Use a laboratory-scale pasteurizer unit to corroborate results of experiments in objective 1. 4. Use a pilot-scale HTST pasteurization system to determine survivability of M. paratuberculosis in raw milk based upon results from objectives 1 and 3.
