The overall objective of this project is to deliver current food safety information to Tennessee high school teachers via a world wide web-based course. The ultimate goal is to have teachers disseminate this information to Family and Consumer Science and Occupational high school.
The food service industry is responsible for a majority of the cases and outbreaks of food borne illness in the U.S. The industry relies heavily on young adults, who often are lacking in food safety knowledge to prepare and serve food to customers. The overall objective of this project is to deliver current food safety information to Tennessee high school teachers via a world wide web-based course. The ultimate goal is to have teachers disseminate this information to Family and Consumer Science and Occupational high school. Knowledge pre- and post-tests will be administered to teachers and students to determine course effectiveness.
