During the 20th century, there were a wide range of processing methods practiced including oven and open-kettle canning, which while popular in the early part of the century, have since been deemed unsafe and unadvisable for present use.

Currently, the only two processing methods advised by the USDA for home canning are boiling water bath, and pressure canning.
